Joseph Palladino
Joe Nick Sams
Currently regarded as one of the most well respected
restaurant owners in the industry, was born and raised
in Bronx, New York and graduated from Mercy College in
Dobbs Ferry, New York. He went on to Graduate from
John Jay School of Criminal Justice and became a New
York City police officer at the age of 20. As a policeman,
Joe sharpened his eye for detail and service on the
streets, entering the restaurant business after being
injured in the line of duty in 1986.

His first foray into the business began at Yonkers
Raceway in Yonkers, New York, where he rose quickly as
the youngest maitre d’ ever hired by the Rooney family,
who, at the time, owner the NFL’s Pittsburgh Steelers.
He was in charge of managing a four star rated, 1,400
seat dining room which attracted the crème de la crème
of New York society.

Before settling in Dallas, Joe orchestrated a successful
turnaround of Sfuzzi restaurant in Las Vegas, as well as
stints at Portobella, and the acclaimed Tre Visi and
La Scala restaurants at the MGM Grand Hotel & Casino.
The restaurant experience that decorates his resume,
demonstrates Palladino’s high level of success in the
management of high-end concepts with exceptional menus
and service standards and the trust placed within him
to bring them to a new level. Before he left, Joe was
recognized as one of Las Vegas’ most promising
entrepreneurs, and rightfully so.

In Dallas, he has enjoyed a very successful partnership
with Joseph Palladino, nationally renowned restauranteur.
